Pina Colada the Lock Down Cocktail


So the fruit and veg boxes from my friend Charley came up trumps again haha. Last night was Friday night, end of the first week of lock down, so we needed a little a treat once the kids had gone to bed. This is an extremely easy recipe and has been done to my taste as I like more coconut flavour than some recipes call for and I prefer it a little sweeter. You can adjust it however you like and add more of or less of any of the ingredients according to your taste. Indeed one friend commented that she loved a Pina Colada but no longer drank alcohol so I suggested just taking out the Rum and making it a mocktail.


Ingredients (for 2 generous cocktails)

  • 100ml Bacardi (or other white rum)

  • 100ml Fresh Pineapple Juice

  • A Thick wedge (approx 1") of Pineapple cut into chunks with the core and skin removed

  • 4 Tablespoons of Tinned Coconut Milk

  • 1 Tablespoon Caster Sugar

  • A handful of Ice Cubes crushed slightly so its easier on the blender.

Tip: I don't see any reason why a 1/2 tin of pineapple chunks in juice cant replace the fresh Pineapple and Fresh Juice.

Method

  • Put all the ingredients into a blender, I only have a stick blender hence crushing the ice slightly to make it easier.

  • Blend it until everything is smooth and combined.

  • Serve in very cold glasses with a straw and wedge of Pineapple and Orange for an extra treat. Enjoy!
